An AGIL Model Construction Study on the Overseas Dissemination of Yangzhou New-Style Huaiyang Cuisine

Abstract

Dietary culture is a unique window through which the characteristics of a nation can be peeked by outsiders. In response to the Belt and Road Initiative, many intangible cultural heritage cuisines are exploring overseas dissemination paths, and Huaiyang cuisine is no exception. Recently, many Huaiyang cuisine restaurants have made innovations to the traditional Huaiyang cuisine to adapt to the new market trends and open up overseas markets. Having gained an insight into this phenomenon, the present study took this kind of new dish as the research object and defined it as “the new-style Huaiyang cuisine.” Through literature review, field research, and questionnaire investigation, this paper systematically analyzed the current situation of the overseas dissemination of new-style Huaiyang cuisine and then constructed an Adaptation, Goal attainment, Integration, Latency (AGIL) model, in the hope of providing some enlightenment for the overseas dissemination of the new-style Huaiyang cuisine as well as other similar cuisines.
